POTATO, whose tubers are used worldwide for foods, feeds and industrial uses, is the fourth global staple crop after rice, wheat and maize. This consensus document, a revision of the original 2002 publication, includes the latest information on the composition of potato such as nutrients, toxicants, allergens, anti-nutrients and other plant metabolites. It also suggests constituents to be analysed when conducting safety assessment of new varieties related to food and feed uses. It provides a technical tool for regulatory officials as a general guide and reference source, and also for industry and other interested parties.
